Hamptons Vinaigrette

Makes About 2 cups
INGREDIENTS
Mushies
1 shallot, minced finely
zest and juice of 1 lemon
1/2 cup champagne vinegar
2 tablespoons stone ground or whole grain mustard
1 tablespoon honey
1 cup olive oil
2 tablespoons chopped herbs (basil, dill, parsley)
salt and pepper to taste
INSTRUCTIONS
Place the minced shallot into a large bowl along with the lemon zest, juice, and vinegar. Stir well to combine allow this to sit for 15-20 minutes to lightly pickle the shallot and remove some of the raw flavor.
After the mixture has sat for a bit, add the mustard and honey, then slowly drizzle in the olive oil while whisking vigorously.
Once all the olive oil is whisked in, add in the chopped herbs, season it with salt and pepper, and use to dress any number of your fav salads!
Pro tip: These can be made and stored in the fridge for up to a week
