Coconut Chocolate Banana Bread

INGREDIENTS
1 ¼ cup all purpose flour
½ cup almond meal
1 teaspoon baking powder
1 teaspoon salt
2 eggs
1 cup packed light brown sugar
3 very ripe bananas
¾ cup coconut milk
¾ cup oil (coconut, canola, veg, etc)
1 teaspoon vanilla paste
1 cup chopped toasted walnuts
1 cup dark chocolate chips
2 tablespoons raw sugar
INSTRUCTIONS
Prepare your oven and pan
Set the oven to 350* F and line a 9x9 inch baking dish with parchment and grease it with cooking spray or butter.
Make your batter
Sift together the flour, almond meal, baking powder, and salt and set it aside.
In a large bowl, whisk together the eggs and the brown sugar until well combined. Add in the 3 ripe bananas and use the whisk to mash them into the egg mixture, leaving some chunks that are about ½ - 1 inch in size.
Add in the coconut milk, oil, and, vanilla then mix well.
Dump the dry ingredients into the wet, along with the walnuts and chocolate chips and stir with a spatula just to combine everything. Do not overmix.
Bake the cake
Pour the batter into your prepared baking dish then sprinkle the top of the cake with the raw sugar.
Pop it in the oven and bake for about 35 minutes, or just until the middle is set and the top is nicely golden brown.
Serve the cake
Cool for 15 minutes in the pan before removing it and cutting into 16 even portions.
