Coconut Tres Leches Cake

Makes 1, 9x 9 inch pan | Prep: 25 min | Bake: 25 min | Oven: 350°

INGREDIENTS

For the cake

  • 1 ½ cups all purpose flour 

  • ½ cup unsweetened coconut flakes

  • 1 teaspoon baking powder

  • ¼ teaspoon baking soda

  • ½ teaspoon salt

  • 5 oz unsalted butter

  • 1 cup granulated sugar

  • 5 large eggs, 1 egg yolk

  • 1 teaspoon vanilla paste

For the Soak

  • 11.25 oz can coconut sweetened condensed milk

  • 12 oz can evaporated milk

  • 13.5 oz can coconut milk

Whipped cream, cinnamon and berries to finish

INSTRUCTIONS

Prepare your pan

Start by buttering a 9x9 inch cake pan and turning your oven to 350°F.

Make your batter

Place the flour, coconut flakes, baking powder, soda and salt in the bowl of a food processor and pulse to break down the coconut a bit, then set this aside.

In the bowl of a stand mixer fitted with a paddle attachment, place the room temperature butter along with the granulated sugar and vanilla bean paste. Beat on medium high speed until light and fluffy.

Add the eggs one at a time, allowing them to fully incorporate after each new addition.

With the mixer on low, slowly add in the dry ingredients and mix until everything is incorporated.

Bake the cake

Dump the batter into the prepared baking dish and evenly smooth it out.

Bake in the 350 oven° for 25-30 minutes, or jsut until golden brown and set in the middle

Make the soak

While the cake bakes, mix together the coconut condensed milk, evaporated milk, and coconut milk. whisk well

Finish the cake

When the cake is done baking, take it out of the oven and poke holes all over it with a fork.

Pour all the soak mixture over the top of the cake, then cover it with plastic wrap and allow it to soak overnight in the fridge.

After the soaking liquid has all absorbed, cut the cake into individual pieces, top with powdered sugar, a dusting of ground cinnamon, and berries of your choosing.
