Comfy Sausage and Tort Soup

Serves 4 | Takes: 45 min

INGREDIENTS

  • 2 spicy italian sausages or 6-8 oz bulk sausage

  • 1 medium yellow onion, diced

  • 2 carrots, diced

  • 4 oz mushrooms, quartered or sliced

  • 6 cloves garlic, chopped fine

  • 1 small can diced tomatoes

  • 4 cups chicken stock

  • 1 tsp each, paprika, garlic powder, sage

  • ½ tsp chili flake

  • 1 bunch kale, chopped

  • ½ cup heavy cream (optional)

  • 10 oz package tortellini of choice

  • ¼ cup Parmesan cheese plus more for finishing

  • Salt and pepper

INSTRUCTIONS

Prep your veg

Cut the onion, carrots, mushrooms, and garlic so you have it all ready.

Start the soup

  1. Put a glug of olive oil in a large pot over medium high heat then remove the sausage from its casing and brown well, stirring and using a wooden spoon to break the sausage up into bite sized pieces.

  2. Once the sausage is brown, add the carrots, mushrooms and onions in and stir. Cook for 4-5 minutes to get some browning on the veg then add your chopped garlic and cook for another minute.

  3. In goes your stock, seasonings, and chopped kale. Bring this to a boil, then lower to medium low heat and let it simmer for about 20-30 minutes, just until the carrots are tender.

Finish the soup

  1. Add the cream (if using) and the packaged torts and cook however the package tells ya.

  2. Check the seasonings before adding the parm cheese right before you serve it up. Crusty bread highly recommended.
