Grapefruit Saffron Frozen Yogurt

INGREDIENTS
1 cup fresh squeezed grapefruit juice
1 cup granulated sugar
1 tablespoon grapefruit zest
Small pinch saffron
1 teaspoon vanilla paste
1 ¼ cups full fat greek yogurt
1 cup heavy cream
½ cup sour cream
1/2 teaspoon ice cream stabilizer
INSTRUCTIONS
Prepare your syrup
To a medium pot, add the grapefruit juice and zest, granulated sugar, saffron and vanilla paste. Bring it to a boil, whisking while it cooks, then turn off the heat. Allow to come to room temperature
Make your Base
To a blender, add the greek yogurt, heavy cream, sour cream and stabilizer, then strain in the cooled grapefruit syrup.
Blend on high for 15 seconds.
Transfer the prepared base to your ice cream machine and churn as directed by your machines instructions.
Once it’s done, transfer it to an air tight container (ideally glass), and place it in the freezer for a few hours.
Once its fully chilled, scoop it and serve!
Pro tip: drizzle a bit of good olive oil over the top just before serving for an extra treat!
