Vietnamese Egg Coffee

Makes 2 Coffees | Prep: 10 min

INGREDIENTS

  • 12 oz strong brewed coffee

  • 2 egg yolks

  • 1/2 cup sweetened condensed milk

  • 1 teaspoon vanilla extract (or 1/2 teaspoon vanilla paste)

  • 1 small pinch salt

  • 2 pinches cocoa powder for garnish

INSTRUCTIONS

Prepare your coffee

Prepare your strong coffee as you normally would then set it aside and keep it hot while you make the fluffy egg topping.

Make your topping

In a large bowl, combine the yolks, condensed milk, vanilla, and small pinch of salt. Use a large whisky to vigorously combine all the ingredients, beating as much air into the eggs as possible. The mixture should go from deep yellow to light, pale yellow and will take about 5 minutes of heavy whisking to achieve the perfectly fluffy topping.

Finish the coffees

Divide the coffee into two mugs or cups then divide the egg mixture between the two cups with generous dollops. Garnish with a sprinkle of cocoa powder and enjoy immediately!
