Wild Rice Dressing

Serves 6 | Takes: 35 min

INGREDIENTS

  • 1 cup raw wild rice mix, cooked as directed

  • 1 tablespoon butter

  • 4 slices bacon, sliced into ½ inch pieces

  • 3 stalks celery, cut into ¼ inch pieces

  • 1 yellow onion, cut into ½ inch pieces

  • 3-4 scallions chopped, light and dark part separated 

  • 1 cup roasted cashews

  • 1 cup dry cranberries

  • ¼ cup celery leaves, roughly chopped

  • Salt and pepper to taste

INSTRUCTIONS

Cook the Rice

Cook your wild rice as directed on the packaging along with 1 tablespoon of butter and some salt and pepper.

Cook the Add-ins

In a pan over medium heat, render out the bacon just until it's slightly brown then throw in the chopped celery and onion. Add the white part of the scallion and continue to cook over medium heat, stirring frequently, until everything is tender and has a bit of brown color–about 3-5 minutes.

Finish the Dressing

Add the warm, cooked wild rice to the cooked veg, along with the cashews, cranberries, celery leaves and green part of the scallion. Season with salt and pepper, stir it all up and serve warm.
