Bacon & Onion Braised Kale

Makes 2-4 portions

INGREDIENTS

  • 4 strips thick cut bacon cut into 1 inch pieces

  • 2 tablespoons olive oil

  • 1 red onion, cut in half, then sliced into 1/4 inch pieces

  • 2 bunches lacinato kale, cleaned and cut into 2-3 inch pieces

  • 1 cup chicken stock

  • 1 tablespoon Worcestershire sauce

  • 1 tablespoon soy sauce

  • 2 tablespoons unsalted butter

  • 1 tablespoon honey

  • Salt and pepper to taste

INSTRUCTIONS

Place a large sauté pan over medium heat along with the bacon nd olive oil. Render the bacon down until much of the fat has been released and the edges are beginning to brown, but it’s not quite crisp all the way.

Add in the sliced onions and cook, stirring frequently, until they’ve softened, are super fragrant and have started to brown on the edges as well.

Add in the chicken stock, Worcestershire sauce, and soy sauce and cook on low heat for about 20 minutes, stirring occasionally. You want the kale and onions to be soft but not mushy, and the liquid to reduce to a nice syrupy consistency that coats the leaves of the kale well. If you find the liquid is reducing too much before the onions and kale are soft, just continue to add a little bit of stock as needed.

Once the veggies are cook, take it off the heat and add the butter, honey and salat and pepper to your liking and serve.
