Brown Butter and Whey Braised Radishes

Makes for 2 to 4
INGREDIENTS
2 bunches assorted radishes
3 tablespoons butter
1 cup whey (or stock)
3-4 dill sprigs, plus more for garnish
1-2 teaspoons lemon juice
lemon zest to taste
small handful toasted, salted sunflower seeds
1 cup ricotta cheese (ideally homemade, but store-bought works!)
salt and black pepper to taste
INSTRUCTIONS
Prepare your radishes
Wash and dry your radishes well then cut them all so they are roughly the same shape. If they are very large, quarter them, otherwise just halve them or even leave them whole.
Cook the radishes
Melt the butter over medium high heat in a sauté pan, swirling it occasionally until it is a nutty rich golden brown color, about 2-3 minutes, then quickly add in the radishes along with a good pinch of salt and some fresh cracked pepper.
Cook the radishes in the brown butter for about 2 minutes, stirring occasionally, then carefully add in the whey (or stock) and lemon juice along with a bit of zest. Lower the heat to medium low and cover with a cartouche or lid that’s partially cracked and cook for 10-15 minutes, until the radishes are fork tender and softened but not mushy, and all the whey has reduced and formed a nice glossy sauce that coats the radishes well.
Finish the dish
Once the radishes are cooked, remove them from the heat and finish with a bit more lemon.
Place a large dollop of the ricotta on the plate and make a well in the middle, then fill it with the glazed radishes. Top with some lemon zest, a sprinkling of toasted sunflower seeds, some fill fronds, and flakey salt just before serving.
