Kimchi Shrimp Cocktail

Serves 4-6 | Takes: 25 min

INGREDIENTS

For the Shrimp

  • 1 ½ pounds 12-16 shrimp, cleaned

  • 2 quarts water

  • 1 cup white wine

  • 2 green onions, cut to 1 inch pieces

  • 1 large knob ginger, sliced

  • Small handful cilantro

  • 1 tsp black peppercorn

  • 1 sliced shallot

  • 1 lemon, sliced

  • Large pinch salt

For the Cocktail Sauce

  • ½ cup ketchup

  • ¼ cup chili sauce

  • 1-1 ½ tablespoons horseradish

  • ¼ cup chopped kimchi

  • 1 tablespoon kimchi juice

  • 1 tsp lemon juice 

INSTRUCTIONS

Make your Poaching Liquid

Place all of the ingredients (except the shrimp), in a large pot and bring it to a boil. Lower the heat and simmer it for 15-20 minutes to infuse all the flavors.

Make the Cocktail Sauce

In a small bowl, mix all the ingredients well and check the seasoning. Keep cold until ready to serve.

Cook the Shrimp

Bring the Poaching liquid back up to a rolling boil. Carefully add your shrimp to the liquid, place a lid on the pot, and turn off the heat. Let the shrimp cook in the hot liquid for 15 minutes then strain them out and discard the liquid and the aromatics. Cool the shrimp in the fridge, then serve along with the chilled kimchi cocktail sauce and some lemon and lime wedges.
