3-Ingredient Pumpkin Mac and Cheese

Makes 2-4 portions

INGREDIENTS

  • 8 oz uncooked pasta shape of choice

  • 1/3 cup pumpkin puree

  • 1, (5.2 oz) block Boursin cheese

  • salt to taste

INSTRUCTIONS

Prepare your pasta

Bring a large pot of salted water to a boil, then add in the pasta. Stir and cook to al dente according to the directions on the box. Reserve 1/2 cup pasta cooking water.

Drain the pasta, then add it back to the pan along with the pumpkin, Boursin, and cooking water.

Place over medium heat, then cook just until the pasta is totally coated and the Boursin has completely melted.

Serve immediately.

Pro Tip: I like to toast some panko breadcrumbs in a bit of butter with some chopped sage and pepitas for a crunchy topping to put on right before serving!
